What I Eat in a Day [Healthy-ish]

Hello all you lovely people! I wanted to try something a little different for this post and show you guys what I’m eating today. Today I’m trying to eat Paleo (a loose interpretation) and be at least a little bit healthy. By no means do I eat like this every day…

 

Breakfast

Ahh, my least favorite meal. I usually don’t like to eat right when I wake up in the morning. So instead I drink a big glass of water until about one hour after I’ve been up and around. And then I eat something light. I am not one of those people who can eat greasy eggs and meats or something heavy like sugary pancakes. My choice today was So Delicious dairy-free yogurt with strawberries and dried coconut. (Seriously, the best yogurt I’ve ever had. And it still has all those wonderful probiotics!)

Lunch

Whenever I start to feel hungry before lunch, I just drink more water. Adding mint or lemon helps to make it feel more like a snack. Today I wasn’t super hungry, so I decided to veg out with my leafy greens and make a salad. Now, this one isn’t completely Paleo because I’ve added edamame as a topping. But this can easily be excluded and subbed for something else like tomatoes or cucumbers, but it’s all I had on hand at the moment.


Today I made it with leafy romaine, grilled chicken and pineapple. I’m a fan of fruit in my salads. I probably would have put strawberries in it too if I hadn’t already had some for breakfast. Then I finish the salad with a drizzle of a balsamic vinaigrette. I usually put croutons on it too for a little extra crunch, but I didn’t have any on hand, and I figured I’d try to be a little bit Paleo.

 

Dinner

I made this awesome Lentil Vegetable Soup for dinner. While lentils (and green beans) aren’t really considered Paleo, I told you I was loosely following the guidelines. Of course, these ingredients can easily be excluded or substituted as you desire if you’re better at following instructions than I am.


Vegetable soup is one of those “kitchen sink” kind of affairs that allows you to just throw in whatever veggies you’re trying to use up. Some other ideas are asparagus, celery, zucchini, leeks, okra, potatoes (again, not really paleo), cauliflower, or kale.

Makes 2-4 servings, Cook time: 1 hr, Prep time: 25 minutes

My ingredients:

  • 1/2 lb lean ground turkey
  • 1 carton vegetable stock
  • 1 cup lentils
  • 2 large carrots
  • 2 cups chopped green beans
  • 1 can diced tomatos
  • Seasonings: paprika, cumin, basil, chili powder, garlic powder, salt, pepper

 

Directions:

  1. Brown the meat in a large sauce pot. Once browned, add about half of stock
  2. Bring to a low simmer
  3. Add lentils, carrots and green beans, and any other hard vegetables
  4. Allow to simmer for another 15-20 minutes
  5. Add tomatoes plus any juice from the can. Season soup to taste
  6. Allow to simmer, covered, for an additional 40 minutes or until everything is tender and about half of the liquid has been absorbed.
  7. Add more stock to reach desired thickness and allow to simmer for another 5 minutes.
  8. Serve with cheese, bread, croutons, or grilled cheese, yum! (For all of you who aren’t torturing yourselves by living a Paleo life without cheese or bread…)

  1. I eat yogurt for breakfast a lot! The past few days, I’ve actually just had a grapefruit to start the day. I eat a turkey wrap on a spinach tortilla almost every day for lunch and a varied dinner. I haven’t tried edamame on salad yet. I may give it a try!
